Madeleine Cupcakes

Never heard of Madeleines?  In my search for new and interesting desserts, I found a recipe for Madeleine cookies.  Madeleines are traditionally a French cookie (that are deliciously soft and cake-like), and are baked in pans similar to cupcake pans.  Only instead of a pan of cups, the cookies are baked in pans covered with little shell shapes.  These yummy cookies lend themselves perfectly to a cupcake transition!  My Madeleine cupcakes are made with powdered sugar IN THE BATTER  (and only a little flour)!  This creates a very light, fluffy cupcake.  Also included is fresh orange zest and a hint of almond.   Each cupcake is swirled with lightly orange cream cheese icing and sprinkles.  Delicious and refreshing!

Neapolitan

These delicious cupcakes include a perfect blend of the traditional Neapolitan flavors of chocolate, vanilla, and strawberry . . . only in cupcake form!  The strata of this cupcake begins with rich chocolate cake on the bottom, followed by moist vanilla on top.  Then, a swirl of sweet strawberry icing (made with fresh strawberries) finishes each cuppie to create Neapolitan nirvana.

Peanut Butter Chocolate Swirl

These cupcakes are pure peanut butter deliciousness!  Each soft, moist, cupcake is peanut butter perfection topped with thick, chocolate fudge icing.  Then, a final swirl of peanut butter (that's right, creamy dreamy peanut butter) crowns each little cuppie.  Peanut butter and chocolate . . . one of the best pairings in history!  No improvements needed!
