Grasshopper Yum!

For all those mint chocolate lovers . . . this cupcake IS your happy place.  The rich, decadent, chocolate cupcake is studded with green mint chips as well as semi-sweet chocolate morsels.  Then, each cuppie is swirled with green mint icing and sprinkled with chopped Andes mints.  This cupcake is not overwhelmingly chocolate OR mint . . . but a perfect combination of both flavors (not to mention easy on the eyes).  A grasshopper never tasted so delicious!

Churro cupcakes . . . delicioso!

Being a former Skipper for the "World Famous Jungle Cruise" at Disneyland, I spent my share of hours enjoying the delicious scent of churros wafting across the olfactories on a daily basis.  That buttery, cinnamony, sugary smell of goodness (that tempts even the strongest of resisters to dig into the ol' pockets and shell out three bucks for a 12 inch stick of yummy) became a staple scent while at work - and play.  In this newest Sweet T's cupcake creation, I delve once more into the world of churro deliciousness.  The moist vanilla cake is ribboned with cinnamon and sugar.  The top is domed with sweet butter frosting, then crusted with more cinnamon and sugar.  This cuppie IS Disneyland for the sweet tooth and taste buds.  A happy adventure you will never want to end!

Want S'more?

Want S'more of these delicious cupcakes?  I do!  Layers of deliciousness abound in this decadent cuppie.  Begin with a graham cracker crust foundation, followed by rich chocolate chunk cake.  Next, enjoy a gooey layer of melted marshmallow and chocolate ganache.  The yumminess finishes with crumbles of buttery graham cracker crust, topped with a rectangle of graham cracker.  When this little delight is devoured, immediately swallow a chaser of ice cold milk (you will need it!)  Who needs a campfire and a stick to roast a "mallow" when you can smack your lips around this perfect creation?  Mmm, mmm, mmm . . . delicious!  I want S'more!  PLEASE.

Jumpin' JJ's Birthday Cake

This fun, 3-layer, confetti vanilla cake (red, yellow, and blue confetti inside) was created for a little boy's 8th birthday.  He and his friends enjoyed a party at "Jumpin' Jacks."  Thus, the color scheme matches the business' colors.  The "tumbling" boys have carved their way around the icing on this cake and are taking a brief rest before "jumping" all over the cake again.  The spiky white buttercream icing is evidence of the boys' handiwork.  I hope "Jumpin' JJ" enjoyed his birthday AND his "Jumpin' Jacks" cake!

Luck O' the Irish

This HUGE vanilla cake is iced with Sweet T's signature vanilla buttercream and finished with fondant details.  Lifting this cake is quite the workout . . . weighing at least 10 pounds (if not more!).  Why so big?  So all the residents of Golden Living Retirement can enjoy and celebrate the March birthdays at their center.  These seniors are indeed "lucky" to devour such a delicious cake.  May the "luck o' the Irish" be with them in their "golden" years!

French toast cupcakes . . . better than breakfast!

What's better than a thick slice of French toast, slathered with butter and rich maple syrup?  A French toast cupcake dolloped with smooth maple buttercream . . . of course!  This cupcake mixes hints of cinnamon and maple flavors.  While the mouth-watering icing tastes even better than melted butter mixed with maple syrup.  These cuppies are better than breakfast.  And, if eaten for breakfast, just make breakfast better!

Cheery Celebration!

Time for the "happiest cake on earth!"  In other words, a cheery, bright, "magical" character celebration cake!  This vanilla cake, iced with Sweet T's signature vanilla buttercream and covered with fondant details, was created for several members of a family who are celebrating March birthdays.  When this "happiest" of cakes is sliced, yummy raspberry buttercream filling will delight not only the eyes, but the taste buds as well.  A delightful cake for the most delightful of families.  Enjoy!

Toasted coconut cupcakes . . . come to mama (that's me)!

 
  
  
 I cannot stop thinking about and dreaming of the next bite I will take of these amazingly delicious toasted coconut cupcakes.  The first bite is heavenly . . . and each bite afterward left me looking forward to each of the following bites.  The perfect balance of sweet toasted coconut icing and coconut cake left my taste buds tickled to perfection.  When the cupcake had (unfortunately) been completely consumed, I could not help but look forward to my next little coconut delight (which I may enjoy sooner, rather than later).  Come to me, my coconut cuppie.  Oh, how I love you so!

Happy St. Richard's Day?


Isn't March the month of leprechauns, gold, rainbows, shamrocks, and St Patrick?  Yes!  So why does this cake say, "Happy St. Richard's Day?"  Well, Richard, my father-in-law, happens to be celebrating his birthday today.  He also happens to be 100 percent Irish (and very proud of that fact).  So, when his wife, my mother-in-law, ordered his birthday cake, she asked for an Irish, St. Patrick's-inspired theme.  I decided to include the "Happy St. Richard's Day" message instead of the traditional "Happy Birthday."  I know he will enjoy this moist, brownie-like, chocolate chunk cake filled and iced with vanilla buttercream.  And hopefully this cake will bring a smile to his face on this, his special day.  Happy St. Richard's Day, Richard!

Flowers Bloom in Buttercream


Sixty of these deliciously creative sugar cookie blooms were ready for their debut at a church function (after a bit of mixing, rolling, cutting, baking, and decorating).  When one's teeth sinks through the silky vanilla buttercream icing and through to the soft, cake-like cookie, an audible sigh of satisfaction can be heard.  Then, nothing can be heard as one takes another bite . . . then another bite . . . then another until the entire cookie has been devoured!  Pure dessert delight!
