A Magical Birthday Gift

My parents brought back this adorable little antennae ball gift from Disneyland.  They could not have given me a more perfect birthday present!  I love Disney . . . it's Minnie Mouse!  I love pink . . . it has pink frosting!  I love cupcakes . . . it's a cupcake!  The only thing that would make it even better would be if this little cupcake Minnie were wearing a princess crown (since I also love all things princess!).  Thanks Mom and Dad!

Peanut Butter Cupcakes

For any peanut butter lover, these cupcakes are heavenly perfection!  The cake is thick, rich, and peanut-buttery delicious!  It tastes like a peanut butter cookie . . . only in cupcake form.  To top off these tasty little morsels, a swirl of chocolate peanut butter icing.  Double yum!

Team Edward Birthday Cake

This "Team Edward" cake was created for my niece's 18th birthday.  She is obviously a fan of the sparkling-in-the-sunlight vampire variety.  I had a difficult time making this delicious vanilla cake with strawberry filling (like blood-only not gross and much more tasty).  I am unashamedly a "Team Jacob" girl.  I am a fan of the big-giant-hairy wolf variety (and I was Team Jacob long before the movies and Lautner's abs).  So, it was tough to pipe "Team Edward," but I managed . . . somehow.  This yummy cake is covered with Sweet T's made-from-scratch fondant, marbled to also evoke the dietary tendencies of vampires.  Happy Birthday, Jessica!

Strawberry Shortcake Cupcakes

These strawberry shortcake cupcakes are the perfect picnic dessert.  The moist, delicious, vanilla cupcake is topped with vanilla pudding, one freshly sliced strawberry, and sweet whipped cream.  I think these yummy "shortcakes" should actually be called "tallcakes."  So many tasty ingredients stacked TALL!.  So, feel free to delve into one of Sweet T's strawberry tallcakes . . . but know that one will not be enough!

If you like Pina Colada (and getting caught in the rain)!

These sweet and refreshing Pina Colada cupcakes are the perfect summer time treat!  The moist cake is loaded with plenty of crushed pineapple and sweet coconut.  The generous amount of cream cheese icing is also filled with lots of crushed pineapple and coconut.  To top of this delicious little morsel, a mound of crushed pineapple and a sprinkling of more sweet coconut.  "If you like Pina Colada . . . and getting caught in the rain" . . . then you will certainly enjoy this perfect Pina Colada cupcake treat!

Happy Birthday, Popski!

I created these adorable cupcakes and giant golf ball cake for my Dad's (a.k.a. Popski's) 57th birthday.  Per his request, I made both carrot cake and carrot cupcakes (that flavor is his personal favorite).  Although, I did make one special addition to my carrot recipe, also per Popski request . . . I added his favorite nut . . . walnuts.  In addition to the tasty coconut, pineapple, cinnamon, nutmeg, allspice, and toasted walnuts in the cake, the cake and cupcakes are iced with thick cream cheese icing.  The cake is covered with made-from-scratch fondant, and the cupcakes are topped with hand-crafted fondant details.  I'm sure I hit a  "hole in one" with these and that my Dad will be delighted to "tee up" and enjoy these delicious birthday treats.  Hopefully they will be on "par."

It's a Rocky Road!

One of my husband's favorite flavors of ice cream is Rocky Road.  So, when I asked him what kind of cupcakes I should make for sampling this week, he said, "Rocky Road!"  These cupcakes are super delicious, but also rich.  Be sure to have a glass of milk handy during/after consumption.  The rich, chocolate chunk cupcakes nearly taste like brownies, and are loaded with toasted almonds.  Then, each tasty cupcake is topped with more toasted almonds and melted, toasted marshmallows.  On top of that is a mound of chocolate fudge icing, plus a swirl of marshmallow icing (made from-scratch, of course!).  Marshmallow icing also dots the outside edge of the cupcake top.  The finishing touch is a sprinkle of even more toasted almonds.  Delicious!
