These scrumptious carrot cupcakes are so moist and delicious! The sweet carrots, coconut, and pineapple blend perfectly with the spicy nutmeg, allspice, and cinnamon. And, the dollop of thick, rich cream cheese icing on top is irresistible! The gifts and birthday message are hand-crafted from chocolate. The ribbon curls are made of Sweet T's made-from-scratch fondant. Happy (delicious) Birthday!

End-of-the-School-Year Cupcake Delights
As the end-of-school swiftly approached, I created gift boxes as "thank you" gifts for teachers and staff at Rees Elementary. The deliciously decadent chocolate chunk cupcakes were mounded with Sweet T's signature chocolate fudge icing. Also, a fondant daisy and curled leaf confection crowned each cupcake. The gift tag on the boxes pictured above and below said the following: My time at Rees has been "SWEET." I "CHOC-O-LATE" of that up to you! Hey, I know it's a bit cheesy . . . but so am I!

Banana Extravaganza!
These over-the-top (literally) banana cream pie cupcakes are the perfect Springtime treat. Each delicious banana cream cupcake is topped with a disk of flaky pie crust (all made from scratch, of course!). The pie crust is topped with banana pudding, slices of fresh bananas, and whipped cream. This yummy cupcake is good, better, and best all in one bite!
For those who prefer banana nut bread over banana cream pie, this rich banana nut cupcake will certainly "hit the spot." The moist cuppies are made with ripe bananas as well as walnuts. Each cupcake is swirled with thick banana cream cheese icing and sprinkled with toasted walnuts. Since I don't usually discriminate against bananas in any type of tasty treat, I will take one of each . . . thank you!

Wedding Cakies
I created 60 of these adorable wedding cakies (cookies that look like a cake - cakies!) for a local religious function for youth. Each girl received her own special wedding cakie for dessert at the evening's conclusion. Deliciously soft sugar cookies iced with Sweet T's signature vanilla - oh, so cute and oh, so yummy!

Mother's Day Delight!
Happy Mother's Day! These delicious carrot cupcakes, topped with smooth cream cheese icing and fondant details, are addictive . . . and the perfect treat to tell Mom "I love you." The moist cake is made with dark brown sugar, grated carrots, coconut, and pineapple. To spice things up, cinnamon, nutmeg, and allspice are added as well. Simply irresistible cupcakes for Mom's special day. I hope Mother's Day is truly "sweet" for all.

Pink Lemonade Cupcakes
One thing that always makes me think of Spring and Summer is pink lemonade. So, these scrumptious pink lemonade cupcakes were made to HOPEFULLY usher in a little Spring-like weather (since we've been getting lots of rain and SNOW here - in May!). Even if the weather patterns don't cooperate, taking one bite of these cupcakes will refresh you and make you feel as though Spring has sprung (even if it continues to snow outside your window). Whether you choose to eat the cupcake sans-icing (as my husband always does), the icing alone (as Sous C always does), or both together (as I always do), you will taste tangy, yet sweet pink lemonade all around. Spring . . . where are you? Please arrive soon! And if you do, I just may allow you to taste one of these delicious cuppies!
